Does anyone know a solution for this? This has shown up in other more "wood" based structures in riften inns and other buildings.

Something is overriding the nif for that floor section. Most likely a lighting or static mesh mod.

He could have also run out of memory.

Seriously without the tweaks weird stuff can happen.

I vote for "run out of the memory" I too had that problem before with my old 1GB memory VGA.
